Feburary meal planning & stuff


Hey peeps...I decided to give myself a challenge.
I am planning to blog 3 times a week. Considering
how little I've done it in the last few months...that's
going to be tricky. Especially since we are moving :)
I know I'm crazy, but blogging is very therapeutic when
I'm feeling stressed. I'm going to start out this month
with my meal plans!!
This is for 2 weeks. We are going to Big Bear next week
for some R&R & snow fun.
Mon: GF Mac n Cheese
Tues: Crockpot Minestrone soup
Wed: Chipotle BBQ Chicken with Rosemary Garlic
Potatoes & Carrots
Thurs: Crockpot Sausage Casserole
Fri: GF Pizza
Sat: on the road
Sun: Meatball Minestra & Grilled cheese, GF oatmeal cookies
Mon: Chicken & gravy Recipe here
Tues: left overs
Wed: Clam chowder & french bread, GF crockpot apple cake
Recipe here
Thurs: Meatloaf, green beans & mashed potatoes
Fri: Chicken w/20 cloves of garlic & roasted veggies
Sat: on the road

Meal Planning for most of January


Hey Peeps,

Thought I'd start sharing my meal planning again.
Dropped off there for a bit, but trying to get back
to saving money!!! Reality check after the holidays!

Mock Baked Ziti: GF noodles (cooked), cottage cheese,
homemade meat sauce, parmesan cheese & other
cheese I had on hand.
Throw it all in a 9x13 & bake at 350 for 20-30...or until
everything is melted and guey.
South Western Chicken: Great crock pot meal!!!
Chicken breasts or thighs, salsa, black beans, corn &
I made rice. So good!! & so simple!!
Gone All Day Dinner: This is kinda like a beef stew, but
with wild rice in it. Pretty good, but the rice didn't cook
all the way. So next time I'll make it separate or use
already cooked rice.
Pupusas: Ok, so I wasn't sure how this was going to
turn out...but YUMMERS!! Made masa according to bag
directions with a little Olive Oil. Cooked ground meat with
onions, a little taco seasoning & tomatoes. Flattened the
masa with my tortilla pressed, filled with meat mixture,
refried black beans, corn & cheese. Laid one "tortilla" on
top of the other & sealed it shut. Oil electric skillet & slap
those puppies on there. We had avocados, sour cream &
salsa on the side...so good & a lot more filling than I was
expecting!
Roasted Chicken, Chicken & Rice Casserole, Enchiladas,
Chili & Rice, and a ham, scalloped potatoes.
So far a good start to the month :) I'll let you know how
the rest of the month goes :) Hopefully I've added something
to your menu! Let me know if you'd like any of these recipes!!!

More Updating...

Here are the rest of my pictures from October, November
& December...

I made my first gluten free cake pops. I made ghosts &
mummies. They turned out pretty cute...and they were
yummy!!!!


Mackenzie's class had their alphabet party and
it was so fun to see her in action!!


Hannah helped me with the Thanksgiving prep.
We made pumpkin pies & then GF pop tarts for
breakfast. They were ridiculously good!!! I'll have
to do a tutorial soon....so good!


Here are the pictures that we took on the fly
for our annual Christmas pictures/cards. They turned
out pretty good considering I was running back &
forth for the family ones :)


Ok, so I think that's it for now. January has been
pretty uneventful so far. The girls are back in the
swing of school. Hannah has her first major report,
on the Shawnee Indian tribe...lots and lots of work!!!
Mackenzie is loving Kindergarten & is going gang-busters
in reading. It's always such an amazing thing to watch
your kiddos learn to read!!!
I'm getting back to real life too & working hard to get back
into shape...harder than I thought!! We're kinda getting into
cycling together & by ourselves. It's great exercise, especially
here in Point Loma...lots of hills :) Philip took a week off
between Christmas & New Years...and it was great!! I miss
having him around all the time!!
Anyway, I hope your New Year is going great so far & that
this year brings love, happiness, surprises, joy, laughter, &
many many blessings!!!

Catching up...

Hey peeps,
I know I haven't blogged in a while!! I've been super
busy & then this Thanksgiving weekend I got sick. I'm
still feeling a little crummy, but I thought I'd use this
time on the couch to catch up with some blog posts.

Halloween Carnival cake contest. We won 2nd place
in "Most creative use of edible ingredients"
